Warm Feta with Fresh Herbs

Time: Approx. 20 minutes

Serves: 6-8

Ingredients

  • 8 oz (227 g) feta block
  • 1 tsp extra virgin olive oil, divided.
  • 1/2 tsp red pepper flakes
  • 1/2 tsp pepper
  • 1/2 tsp (2 g) fresh dill, chopped
  • 1/2 tsp (2 g) fresh Italian parsley, chopped
  • 1/3 medium cucumber, sliced
  • 1 cup (227 g) pita chips

Directions

  1. With the rack positioned in the center of the oven, preheat the oven to 400° F (200° C, or gas mark 6).
  2. Remove feta block from packaging and pat dry with a paper towel to remove excess moisture. Drizzle 1/2 tsp oil in an oven-safe baking dish, place feta block in dish, and drizzle remaining oil over top. Sprinkle the top of the feta with red pepper flakes and pepper. Bake for 10-15 minutes.
  3. Remove feta from the oven and allow to cool slightly, then top with dill and parsley.
  4. Serve with cucumber slices & pita chips, or vegetables/chips of choice.
